Last night I made veggie non-fried fried rice... It was a huge hit with the H who is super picky!
Tonights plan : Cheesy chicken empanadas with mashed sweet potatoes and for dessert apple fritters with fresh fruit and vanilla ice cream
Hopefully tonights plan goes through!!!

My dinner will probably be a $5 Hot N'Ready and ice cream that we already have at home.
I have been doing pretty well with dinners too. Last night we had a homemade sloppy joe mixture in sub rolls with melted provolone cheese over it, and fresh green beans that had been lightly sauteed in butter.
Wednesday was tequila, garlic, thyme chicken with roasted potatoes and steamed summer squash.
Tuesday we had whole grain elbow macaroni's in alfredo sauce with chicken, summer squash, broccoli, and carrots.
Tonight I think is going to be hot dogs.
Nice! I have my days where I just don't want to cook, but I try my best to cook every day still. Being a SAHM I feel like it's my job to have dinner ready for when my FI gets home. I've done caramelized pork chops with sweet potatoes, lemony salmon pasta and a pot roast with mashed potatoes this week (we had a day where I just didn't want to cook). Tonight we're having beef with broccoli made in the crock pot so it's REALLY easy!
