Ok, so we want to use a family name and we are thinking of boy names now. We have settled on Isaac Joseph, my question is can we use Zac as a short?

You can refer to your kids as whatever nickname you want... I have a friend who named her child Tristan but they have always called him Chaz.

Although the spelling doesn't match, it makes total sense how you say it. How else could you call him Zac? Saac would probably get him beat up.
