PW: What is your favorite dish to make?

I am trying to discover new things to make for dinner at home. I'm sick of the same 20-30 things I know how to make.

Gimme some ideas girls.

  • I make some really kick butt creamy chicken enchiladas. I will give you the recipe.

    2-3 chicken breats

    chicken broth to cover

    Herbs and garlic for broth

    1 small onion, diced

    1 can green chiles

    1 8 oz thing of cream cheese

    2 cans of enchilada sauce (green or red)

    10-12 corn or flour tortillas

    Mexican blend cheese

    1. Boil the chicken in  chicken broth, herbs, and garlic until it falls apart.

    2. Remove chicken let set for 4 minutes, then shred with 2 forks.

    3. Sautee onions until clear, add shredded chicken, can of green chiles, and cream cheese. Stir till warm and melty.

    4. Put filling in tortillas and roll, place in baking dish. Cover is sauce and put shredded cheese on top.

    5. Bake at 350 for 30 minutes, or until bubbly and cheese is melted.

    6. Serve with sour cream. 

    This is everyone's favorite dish of mine. It is so yummy. I sometimes just make the filling and eat it with a spoon.

    -Linguini and clam sauce is ALWAYS a hit (I use gluten free pasta, made the switch and no one noticed!)

    -split pea soup

  • I just discovered this blog https://life-as-a-lofthouse.blogspot.com/.

    We made her baked sweet and sour chicken with fried rice the other night.  It was sooooo good!  I have many of her things on my menu for the next couple of weeks.

  • Chicken and noodles, or chicken and dumplings. Something about those two recipes just makes me feel so calm and happy.

    I also love baking chocolate chip cookies from scratch. YUM.

  • Pizza is always a hit because everyone in the family loves it, and it's pretty easy. I make the dough in my bread machine and use Penzey's Pizza Seasoning mixed with tomato sauce for instant Pizza sauce.

    Chicken Parmesan always goes over well too - I use jarred marinara to make it really quick.

    I love my Cook's Illustrated 30-minute meals cookbook. Lots of classics and more unique dishes of all types, although sometimes 30 minutes is a stretch, they are by far the BEST fast dinner recipes I've found, everything I've made from there I would probably make again.

    I make this quite a bit too! It's the exact same recipe. It always makes way more than DH and I can eat so I freeze the rest.

  • I prefer phone calls for take out.

    As of last Thursday, it's grilled pineapple on skewers with roasted marshmallows, also, grilled peaches, and grilled bananas with ice cream.  ... you didn't say it has to be super healthy!  The sliced yellow, red potatoes in foil pockets with butter & garlic powder and lemon pepper is good on the grill and so are the baby carrots with brown sugar and butter in foil pockets grilled up.  Oh and sweet potatoes (jewel yam variety) are yummy as well.  Best part, I spend an after noon, DH spends the evening cooking & we eat like royals!

     

    P.S.  maxim - thanks for the Cooks Illustrated 30 min meals cookbook idea - think I just found DH's birthday present for next month!

  • Tacos is one of our favorites.  I don't eat meat, but DH does, so I'll cook ground beef or turkey for him and veggie protein crumbles or sauteed veggies for myself, then whatever toppings we want- lettuce, onions, olives, cheese, guac, etc.  They are so quick and easy.  We usually pair with rice and/or a salad.
