only because I suck at coming up with creative, healthy ideas that satisfy my appetitie. Today I went to the grocery store before lunch in hopes of filling my cart full of ideas.....all I came up with was:
an verything bagel with cream cheese and humus, an apple, and a pickle....wth!

I usually have leftovers from the night before for lunch.
How about making a pot of soup and eating that throughout the week? I used to love to do that when I was still working and didn't cook at home as much.
Other ideas:
Creative salads (using fun toppings like nuts and dried fruit and cheese), fun wraps? I think I've seen a lot of good wrap ideas on Rachel Ray's website. I think that's what I'm thinking of anyway...
Good luck, I know the food thing can be frustrating. I'm finally getting to the point where I can force myself to cook and eat what I have planned most days because I'm just so over the not knowing thing.

I second the creative salads. Once MS is over and you can stomach lettuce again that is. I stock up on my favorite veggies (sometimes I buy precut/bagged if I'm really lazy) Lettuce, peppers, cherry tomatoes, black olives, carrot, cucumber. Wash and put everything into tupperwares at the beginning of the week. Then I hit the trail mix bar. I usually get raisins, dried cranberries, some almonds, sometimes I treat myself to those sesame stick things. You can mix it all up or store separately. I get a couple of different dressings. (Whole foods has great ones with no oil-very healthy) Lastly a cheese for the week, and then some canned skipjack tuna or chicken I can cook and cut up. If you have everything in separate containers you just have to pull out the things you want and mix and match them up. I try to make my salad a little different every day. I would have that with half of that everything bagel!
Also for an awesome and refreshing salad you can make a carrot salad:
Grated carrots, oregano, lemon juice, a little salt and pepper, olive oil
It's a good arm workout too!
I've been doing cottage cheese mixed with fruits (raspberries, blueberries, etc) for between meal snacks...I've been making my own egg & cheese mcmuffins with whole wheat english muffins and egg beaters.
I've been trying to cook as much as I can at home (versus getting Panera every 3.2 seconds, which would love to do!) but I've been partial to chili (I need to eat TONS of protein, so I make a large batch of homemade chili and freeze most of it and have that on hand as well).
Beyond that, I've liked making mixed salads....with black beans, peas, croutons, chicken (I usually cave here and throw in a little fried chicken!), etc.
