  •  I have a lot of frozen chicken to use up this week...

    Monday: DH has pool league, so it will be a Lean Cuisine and salad for me.

    Tuesday: Roast Chicken with Mushrooms, Peppers & Onions, Garlic-Parmesan Risotto

    Wednesday: Slow Cooker Italian Chicken Alfredo over Linguine, Salad

    Thursday: Chicken Tacos, Mexican Corn & Guacamole

    Friday: Sandwiches for the road - we are heading to the lake

    Saturday & Sunday: At my parents' lake house

  • Monday: leftover Caribbean chicken with curried quinoa

    Tuesday: Cheese tortellini with chopped tomatoes, basil, spinach and garlic- all from our garden.

    Wednesday:West African beans and Rice

    Thursday: I might get some pizza dough from Trader Joe's and grill out some pizza, or we will have crackers and cheese or a bagel.

    Friday: Chicken and Mango Sausages with Fried Rice and Veggies

  • Ravioli with pesto

    Swedish meatballs

    Chili lime glazed salmon, broc, roasted potatoes and onions

    Pastina, chicken saltimbacca, broc

    Giant salads with leftovers

     Wednesday: Slow Cooker Italian Chicken Alfredo over Linguine, Salad

    I do make a few changes to the recipe. I leave out the water altogether...it really doesn't need it. I add extra garlic and use low-fat cream cheese and the "healthy request" versions of the soup to cut down on salt and fat. I only use half a package of Italian dressing mix to cut down on salt. I just add in some extra Italian herbs and pepper for added flavor. I cook it for about 5 hours on low. Enjoy!

    ETA: I usually substitute chicken thighs for breasts...they stay nice and moist!

  • Tonight: probably scalloppinis in saffron cream sauce with rice and asparagus. 

    Tuesday - roast chicken with compound herb butter, mashed potatoes, and salads.

    Wednesday - maybe slow-cooker shredded beef tacos

     Thursday - 5 spice pork tenderloin with rice pilaf and a veggie.  

    Friday - dh will probably get put on grill or smoker detail.  

    July 20th, 2012: Never forget the day the fb douchebags tried so hard, but ultimately failed. Viva la October 2011! Yeah, I called you douchebags.

  • Monday: Chicken in Sour Cream Sauce over egg noodles

    Tuesday: Chicken Teriyaki over sticky rice

    Wednesday - Saturday: Vacation!!!  I am so excited to let the restaurants do the cooking for me this week!

    Sunday: Marlboro Man Sandwiches with something (I think. We'll see how I feel when we get home)

    Wednesday: grilled sirloin steak over corn polenta

    Thursday: Girls Night Out

    Friday: pizza with carmelized onions and sundried tomatoes, and a spinach salad

    Saturday: Mediterranean salad with grilled chicken and Israeli couscous

    Sunday:  Edamame and chickpea salad

  • We went to Trader Joe's yesterday so minimal cooking for me!  Woot.
