Anyone into freezing your own veggies? (obviously NBR)

I just washed and chopped a bunch of green beans from my garden.  Do I really need to blanch them first?  I've read online that blanching of course, stops the enzymes from continuing to ripen the veggie... but other sites say that freezing will do the same thing. 

We have a new (less than a year old) upright, high efficiency deep freezer.  I buy frozen veggies ALL the time, so this year I just decided to grow a bunch of stuff in the garden, and try my hand at canning/freezing.

 What do you think?  Can I skip the blanching?

  • My BIL is originally from Iowa (we live IL) and had a HUGE garden growing up. He and my SIL had green beans in their garden last year and they blanched them. I think that they supposedly freeze better too. 

    We don't grow green beans since dH isn't the biggest fan, but I would blanch if I grew them only bc BIL is an awesome, very experienced gardener and has helped DH with ours quite a but.

  • Blanche them. It only takes about 3 minutes and it will also preserve the color of your veggies.

  • My husband's a crop farmer by night, and we blanch our green beans.  I also cook pumpkin and puree it and freezer bag that as well for pumpkin pies, rolls, and muffins throughout winter.    

    Another good thing, if you like corn, I always cook double corn on the cob that we would normally eat and the just cut the extra off the cob and put in freezer bags.  Nothing tastes better on a cold winter sunday than sweet corn that you froze! YUM!!!

  • Thanks guys!  I blanched them, but I left one bag (16 oz) un-blanched and froze it immediately... just to see the difference!  Smile

    That's a great idea with the corn!  We've usually done an assembly-line system where MIL blanches, FIL & DH cuts it off the ear, and I measure & bag the corn.  But that's when we're doing a LOT all at once!

    I also love just putting the whole ear (leaves and all) on the grill & grilling it... yummy!!!  I love this season!
