LOL. I do a lot of toast and fruit too. I rotate the toast toppings and fruit offerings though. Still easy but a little variety. Blackberries, pineapple, raspberries, strawberries are a fave. I have three fruit puree bags left in the freezer and I use those as jam or I do PB.
I also do a Banana and PB rolled in oats. Yogurt with a straw stuck through the lid so she can suck it out. Easy, fun for her and no mess. Cheerios with milk in her sippie or a cereal bar if I'm desperate.
On weekends, we do french toast, omelets, breakfast pizza (homemade so much healthier), egg bake.
My MIL gives LO a warm buttered tortilla with cinnamon and sugar on it sometimes with a side of fruit. Not overly healthy, but it could be worse!
Bagels and cream cheese, English muffins with jam, Cinnamon raisin bread are all things I do sometimes too. Dole also makes yogurt covered fruit bites I give LO in the car if I'm in a mad rush. No mess that way. She likes smoothies too. I just dump them in her sippie with a side of toast.

We make pancakes and mix purees into them. So, he has sweet potato pancakes, green bean pancakes, applesauce pancakes....you get the drift. LOL!
He eats pancake and yogurt daily. Sometimes he also eats sausage. I wish he would eat fruit, but he freaks out and will not touch it. LOL! So, he sometimes eats fruit pruree (if he doesn't eat yogurt, which is very rare).

Dylan eats cinnamon raison toast and every morning with cereal. He's excited for it and kicks his legs and claps his hands like a maniac when he sees it coming... I'll switch it up once he gains a few more teeth.
This was so helpful for me too! I'm getting bored with the same breakfast foods and it seems like Gavin goes through phases too in which some days he likes one thing and then it changes the next week. However we've done waffles, cheerios, granola bars, FRUIT, yogurt combos.
LO likes eggs, so that's typically on the menu every morning. We do bananas/other fruit, toast, yogurt. Really it tends to be pretty boring.
Weekends I will try to do stuff like french toast to switch it but it's hard during the week trying to feed everyone and get to work on time. And LO isn't a big breakfast eater, he still nurses a lot when he wakes up so that tends to fill him up.
Dry cereal is always a quick/easy food. LO loves cheerios.
ETA - could you try an omelet with some cheese/veggies added? Maybe he'd like that better than plain eggs?
