I made black bean soup tonight and it was delicious. Two cans of black beans, 16oz of chicken broth, 1/2c salsa, 1tbs chili powder. Mash one can of beans. mix all the ingredients and cook down over the stove. I think I would use less chicken broth next time so that it is a little thicker. I put a dollop of sour cream on top.
I also love spaghetti and alfredo. I buy the specialty bread from walmart a day old for one dollar and freeze so when I make these I just pop it in the oven to crisp up the outside and warm the inside. It is delicious.
I like baked or grilled chicken and then drizzle holandaise sauce over the top with cooked asparagus and fresh tomatoes.
I always try to schedule one leftover night to make for a very easy night too.
I like to grill dinner, and when dh is around we do not eat pastas rice or bread, when he is gone all bets are of I eat whatever. I make my menus on Sunday usually here is my menu from the week before we went on vacation Monday - honey garlic pork chops and steamed broccoli Tuesday - boneless chicken stuffed with cheese and a garlic sauce and salad Wednesday - spinach salad with pork tenderloin and peaches Thursday - steak kabobs and grilled corn Friday - dinner out saturday- we had a BBQ with friends. Dh left today for 9 weeks we had frozen pizza
I ty to buy a large pack of chicken breasts once or twice a month when they are on sale. I then bake most of them and cut up/shred for casseroles during the next week or two and freeze. I chop up the remaining chicken for stir fries or chicken tacos. That way when I plan for the week all I have to do is know to pull the bag out of the freeze and set in the fridge the night before so when I get home from work I can just add the other ingredients and throw it in the oven or cook it up.
Because of all of my families picky eating habbits it is hard to come up with meals. I don't eat beef, Justin does not eat vegetables, DH does not like pasta -except he will put up with spaghetti once every 4-6 weeks.

We do alot of grilling since our freezer is stocked with meat. Easy meals I make are chicken enchilades or I'll just throw some sausage or hamburger in with different veggies, potatoes and tomatos in the dutch oven...kind of like a stew.
I just did meal planning for the rest of this week and next week cause we've been eating out about 7 meals per week between lunch/dinner. I just wish JT would eat what I make!
My fave - I love the crockpot. I made this tonight. Pepper Steak
1 to 2 lb london broil, I season with Adobo, cut into 1 inch pieces or so
2 or 3 peppers, I like all different colors, cut into 1 inch pieces
1/2 to 1 onion, chopped
1 or 2 cloves of garlic, chopped
2 cans of stewed tomatoes, I like the Del Monte Italian season
sometimes I throw a little flour to make the juice thicker
4 hours on high or 7-8 on low then serve over Instant rice. Makes house smell delish.
ETA: Oh, use cooking spray or your crock pot will be a PITA to clean!
Other faves - there is a wedding reception place around here that jars sauce so we'll have that with Rigatoni. It's fast and easy and yummy. They sell the sauce at the super market, it's just way more than Ragu but it's a $7 meal that feeds my bottomless pit huby so it's worth it to me.
