I have a friend with an Evelyn whose nn is Evie, and it is pronounced Eh-vie. I'd just go with Evie.

In order for me to see it on paper and think to pronounce it "eh-vee," I think it would have to have two v's, so either Evvy or Evvie, but really, I hate how both of those look (and the two v's look a bit like a w, which may be confusing in it's own right), so I say follow PPs advice and just spell it Evie and teach people how to pronounce it.

Ditto the others. Spell it Evie and I think it's logical to keep the Eh-vie pronunciation since Evelyn is Eh-vuh-lyn.
