Healthy & Simple Lunches or Dinners?

Anyone have any they would like to share? I've been eating brown rice with Gorton's grilled fish fillets, chicken salad made with greek yogurt in a whole wheat tortilla & the like for lunch lately. I just need some ideas to mix it up!

IUI w/clomid 7/2011. IUI w/clomid & injectables 11/2011 & 1/2012. ~ All BFN

IVF:EPP 5/2012 ~ (4R, 3M, 2F w/ICSI). Both embryos txfrd. ~ BFN
BCP to manage endo from 10/2012 to 12/2012.
FET w/donor embryos #1: 10/2013 Cancelled
FET w/donor embryos #1.2: 11/2013
~ ET of 2 beautiful blasts on 11/27.

  • My go to lunch is ww warp with some meat (whatever is leftover like chicken), spinach, cheese, avacado and salsa.

  • Low fat, low sodium chicken noodle soup

    Veggie beef stir fry - beef, yellow/green peppers, carrots, broccoli, celery onion, brown rice

    Baked potato, low fat shredded chees, salsa, broccoli florets

    Chef salad with low fat dressing

    Turkey and Rice peppers

    Oh, I'm so jealous of you being so good & eating salad that much! I wish I could eat a salad, enjoy it & be satisfied. Rarely do I ever want salad & if I do eat just salad I get hungry an hour later!

    Try pairing it with Greek yogurt.

  • Pita pizza with spinach, mozz cheese and tomatoes. White bean and kale soup. Lentil curry over quinoa. Baked sweet potato with chives, nitrate free bacon, black beans, cheese and spices. Chipotle burrito bowl: brown rice, chicken, black beans, salsa, cheese, avocado.

  • I love veggies with hummus. 

    I have a CSA membership, so sometimes it's just a LOT of crisp fresh veggies.
