My parents have always cut part of it off and put it in a container in the cupboard and left the rest in the fridge until they need it. I think if you use it within an appropriate amount of time it's ok.
I don't have that problem though because DH and I buy margarine. I only use butter in cooking/baking.
I was going to say of course we do, how could you not, but then I realized my parents do leave like half a stick out usually so I guess it's not that weird. We always buy margarine in the huge tub though so I wouldn't leave that out.
I refrigerate the vast majority of my butter and leave a stick out. I'm not a fan of massacring my toast, so I want soft butter to spread on bread.
I've worked in several bakeries and the amount of room temperature butter you need means a lot of butter is left out of the cooler, it's just used in a timely fashion.
I voted SS because DH and I fight about this. We keep it in the fridge which I am fine with, but occasionally I want to leave the butter out over night so it will be all soft for the morning... He will have none of it, he doesnt even want it out of the fridge for more than an hour, which is hilarious because I keep the maple syrup in the fridge and insist upon this and he wants it in the cupboard

Is it real maple syrup? I guess if you use it fast enough, it's fine, but it isn't like the stuff that's made from Corn Syrup that can stay out forever.

I'm usually a freak about not letting stuff sit out too long or letting things get even close to their expiration dates so I'm suprised I'm in the minority on the butter issue.

What about heating it up to melt it? If I heat up a stick, is it ok to reheat? Put back in the fridge?
If you melt it and reheat it, it won't be the same. The milk solids seperate from the fat during melting, and won't emulsify back if you just stick melted butter in the fridge.

What I didn't know (until I saw it there) was that in England they don't refrigerate eggs. I would never leave eggs out! But I guess you can??
I leave covered egg whites out for certain purposes, but not whole eggs and not yolks. I don't freak out if I realize I didn't put them in the fridge hours after I got home from the store, though, either. I grew up in the country and a lot of my friends had chickens and would leave the eggs on their dining table.

It doesn't HAVE to be refrigerated, but when we tried to leave it out, it got all melty and gross. So we refrigerate.
eta: It just gets rancid faster if it's left out.
