Pancake Question

I noticed reading a post on here that a lot of you feed pancakes. I don't know if this is a stupid question or not...but are you using instant type pancake mix to make them? I tried researching online a little and found that you can also use baby cereal and flour to make them, but I just wondered what is okay to use and what most of you are using? Please let me know your recipe or if you use boxed-mixes. Thanks in advance!

  • Instant or frozen (and I serve them frozen). I only  make from scratch when I'm desperate and have eggs on hand.

  • I make them from scratch.

    1c WW flour

    2 eggs

    1/2 water

    1/2 milk (I've done 1c water to omit milk)

    2 tbsp melted butter

    I'll often cut the recipe in half.

  • I make them from scratch..they are more like crepes than pancakes because my kids don't like them so thick.  This is the recipe I use:

    1 1/2 cups flour

    1/2 cup infant fortified cereal

    2 1/2 cups milk

    4 eggs

     I sometimes add a little more milk to thin them out even more.  They are great because I can also stuff them with ricotta cheese, berries, yogourt, bananas, etc...

  • I've done them from scratch plain, with bananas, and with sweet potatoes, or from a boxed mix, or frozen. The sweet potato pancake recipe I use is this one, from wholesomebabyfood.com:

     2 tbsp unsalted butter, melted

    1/2 cup cooked sweet potatoes, mashed 
    1 egg (or 2 egg yolks)
    1/3 cup all-purpose flour (use graham flour for a nice taste.)
    1/2 tsp baking powder
    1/4 cup milk (or more) 

    Mix sweet potatoes in a mixing bowl with egg. Stir in the flour and add the baking powder. 
    Add up to 1/3 cup of milk while stirring. Stir in 1 tbsp butter. 
    The mixture should have the consistency of thick, lumpy sauce like an "instant" pancake mix.
    Place a non-stick or heavy iron skillet over medium heat on top of the stove and add 1/2 tsp butter. 

    Spoon batter into the skillet and cook until bubbles rise to the surface of the pancakes and break. Approx. 1 to 2 minutes. 
    Using a spatula, flip the pancakes and cook another 2 minutes.
    Remove pancakes from the skillet and keep warm on a covered plate in the oven. Freezes Well.

  • I haven't made any yet but I know wholesomebabyfood.com has a recipe with barley and formula. I am sure you could use wcm when your LO makes that transition.

  • I use this recipe minus the chocolate chips and cream.  This is the recipe that I've used for years when SO requests pancakes.  DS LOVES them.  Plus I like knowing what's in them and that there is very little sugar.

  • I make them GF and to make them a little tastier I mix a fruit pur?e in with the batter. He is out of purees now but he does enjoy the pancakes with some homemade apple pur?e mixed in!
