On blended families someone asked for favorite chicken crock pot recipes. It got me thinking. I LOVE crock pot recipes! What are your favorites? (Anything, not just chicken recipes). Here's mine:
Easy Crockpot Chicken Spaghetti
16 oz spaghetti (I use bowtie pasta and cook it separate)
16 oz velveeta light
1 can cream of mushroom
1 can cream of chicken
1 can rotel
2 cups cooked chicken, chopped (I shred mine)
1/2 onion, chopped
1/2 cup water
Salt and pepper to taste
Combine ingredients in crockpot and cook on low for 2-3 hours. I add the pasta in the last 30 minutes.
Smothered Steak
Round steak or cube steak, tenderized (I just use how much I need)
1 can cream of mushroom
1 packet of onion soup mix
1/4 cup water
Combine ingredients and cook on HiGH for 4 hours or low for 8 hours. Stir occasionally.

I love mexican chicken- 1 lb of chicken breast, 1 jar of salsa. Cook then shred and serve in tacos. I add some sliced jalapeno if we have it.
Beef roast or beef tips- 2 lbs beef, 1 can cream of crap, 1 can french onion soup, 1/2 can water, some kitchen bouqet, some worcestershire, some hot sauce, then I coat the beef in steak seasoning and layer sliced onion on top, then a 1T of tapioca to thicken. I serve this over noodles so when I start the water for those I add peas to the crockpot.
I also have a beautiful cherried pork loin I do, but can't remember the recipe.
I also like soups- chili, potato, chicken chili.
I love the crock pot.
I make baked potato soup and vegetarian turkey stuffing in the crock pot...sooooo yummy.
AAND now I'm hungry.

Enchilada Chili. MOST AMAZING CHILI EVAR!
1lb ground beef, turkey, w/e "meat" substitute you use.
2 Cans Chili Beans in Sauce
2 Cans (I use the large ones, more liquid = yumminess) Enchilada sauce
1 Can rotel (can omit if you don't like tomatoes)
1 Can corn
1/2 Packet of taco seasoning
Sprinkle Cumin all over
Mix it all together, cook on high for 3-4 hours (stir sometimes if you do this) or 5-6 hours on low.
I serve with a dollop of sour cream, sprinkle cheese, and some fresh cilantro. IT'S AMAZING.
Taco Soup (it's actually a weight watchers recipe!)
1 lb ground beef (we have also used ground turkey)
1/2-cup water
1 package Ranch Dressing mix
1 package taco seasoning
1 can chili beans
1 can corn
1 can rotel
1 onion diced (I typically use dehydrated onions because I hate cutting them)
Brown ground beef. Add your water and seasoning mixes to the crockpot and mix thoroughly. Add in your canned corn, rotel, chili beans and onion (I drain about half of the liquid off the corn, but leave everything else just the way it comes). Then add in your cooked ground beef and stir it all together. I typically put it on low and let it simmer all day. Serve with tortilla chips and shredded cheese.

Okay, nothing ground breaking here, but super easy for those days when you know you're getting home late and won't have time to prep...
1-2 chicken breasts (1 feeds me plus DH)
1 can salsa (we like spicy, but you can do mild/meduim)
Cover the breast(s) in salsa and throw the crock pot on low in the morning. No matter how late you get home, the chicken won't dry out. Whenever you're ready, take two forks and pull the breast apart and stir in with the (somewhat reduced) salsa. Makes an excellent filling for tacos, burritos, quesadillas, etc.
Its funny that 2 people have posted this recipe. I made this when I first found out I was pregnant. It was yummy while I was eating it but afterwards I wanted to gag! Now every time I even think about it or avocado, I want to throw up. I guess I won't be having that one anytime soon. Also not looking forward to my next ticker change, avocado.
Pulled Pork is by far the favourite in our house
Simple - Pork shoulder, and the packet of clubhouse pulled pork (follow directions pack).
put it in a bun, devour as required.
(makes for happy husbands.)
You can do this with pork, a jar of salsa verde, chopped onions and diced green chiles. Easy and pretty tasty.
