Preferably not Mexican or anything that's causes a lot of gas. (my baby has a very sensitive stomach, I'm bf.) I have boneless skinless chicken breasts). I need some help ladies!

I would throw a couple of breasts in there, two cans of cream of mushroom or chicken condensed soup and some frozen veggies (like carrots, peas and corn) then I would use some bisquick and bake up some biscuits and put the chicken on top of the biscuits.
One full bottle of the salad dressing at the bottom of the slow-cooker. Add the chicken breasts on low - cook for 6 hours (check at 5 - you want to have them cooked, but not shred).
cut up the veggies.
Make the pasta more than el dente (because it will sit in wet dressing and get mushy).
pull out the chicken and dice up.
mix in 1/2 of the second bottle of dressing with the veggies, pasta and chicken and chill (at least a couple hours but overnight is fine). Then add the rest of the dressing right before you serve.
This is probably not good for gassy babies but in the future, the easiest crockpot chicken recipe ever:
Buffalo Chicken Sandwiches 1 package of boneless skinless chikcen breasts 1 packet of dry ranch dressing 1 bottle of Frank's Red Hot buffalo sauce.
Layer chicken (I pepper the chicken but don't salt), ranch dressing mix, and pour hot sauce on top. Cook on low for 5-7 hours. If you're at home you can throw in a tablespoon of butter for the last hour but it doesn't make THAT much of a difference.
I serve it with sweet potato fries. The family loves it. It's spicy but not so much so that DD can't eat it.

I do a similar one to this...
one pack boneless skinless chicken
one can cream of chicken soup
one can cream of celery soup
one yellow onion
just enough water to cover it all
cook on high for 5-5.5 hours. Shred the chicken, tear apart a can of layers style biscuits and place over the top. Cook for another 30-45 minutes (biscuits will not brown like they do in the oven)

Have you tried the easy crockpot chicken spaghetti? DH doesn't like chicken spaghetti but I make this one and just change out the spaghetti noodles for bowtie pasta and he really likes it.
16 oz spaghetti
16 oz Velveeta light
2 cups cooked, chopped chicken (I shred my chicken)
1 can cream of mushroom
1 can cream of chicken
1 can rotel
1/2 cup water
1/2 onion, diced
Salt & pepper to taste
Combine all ingredients in crockpot. I cook the pasta separate and add it in the last 30 min. Cook on low for 2-3 hours.
