Lunch/Dinner Suggestions

I love the post below on breakfast suggestions! Can we get one started on lunch and dinner?

DD is pretty picky, so it's generally hard for her to eat an entire "meal" of just solid foods. She is usually hungry for a bottle an hour later. 

She loves water, but we aren't giving juice yet (just for sugar reasons). Any other liquid suggestions?

Foods she will eat: Bagels, waffles, cheerios, string cheese, macaroni and cheese, sliced roast beef, chicken strips/nuggets, blackberries, blueberries, carrots (but only when in soup for some reason), yogurt, cereal of any kind, grilled cheese, sometimes apples, sometimes peas, snack puffs.....

I feel like all I am feeding my kid is junk with a few things mixed in!  Help please!

  • We always have beans on hand for protein if there's not meat in her meal.  She loves pasta so that's always a hit. I make quesadilas occasionally and can usually put anything in them and she'll eat it.  She getting better with meatballs and breaded chicken.

  • I don't have beverage suggestions since we just do milk and water.

    I've used ground chicken or turkey, seasoned it, made small meatballs that are soft & easy to break up/mash with baby teeth & jaws, lol. LO likes them, especially if I add some tomato sauce.

    I also made mini "turkey burgers" with some finely minced onion & spinach mixed in; I freeze them, take a small patty out & as I'm defrosting it in the microwave, I add a little low-sodium sliced cheese.

    For non-meat protein, he likes beans a LOT so I"ll give them at lunch, dinner sometimes. I get "dark red kidney beans," sautee them with a little evoo and some dried oregano, basil & onion powder. They stay firm but take on a nice, creamy texture, good protein & fiber (but I love beans; many people may find this gross).

    I microwave sweet potatoes, let them cool a bit, peel the skin & cut them into chunks; he's a lightweight so I add a little butter & I also sprinkle with cinnamon (not that they need sweetening; just hoping he gets used to herbs & spices, who knows!)

    He devours green beans & peas as well.

    Unbelievably to me, he rejects pasta and mashed potatoes :-/ so I have a difficult time with adding some starch (other than beans & sweet potatoes!).

  • I don't have a set menu for lunch or dinner. Its pretty much whatever we have around. That being said, every day she eats yogurt and fruit. She will inhale fruit! Like handfuls at a time! Veggies are tough...she used to love them all and now her tastes are changes and she doesn't like any veggies except carrots and sweet pots sauteed in evoo. As for meat, she will eat anything. She used to like beans, but not so much now. Sometimes she eats cheese. Honestly, I feel like every day she is different...one day she loves something, the next day she hates it.

    Her normal lunch is yogurt, 2-3 types of fruit, maybe a veggie, some form of protein (usually leftovers). Dinner is anything goes. If we eat it, she eats it. The exception being anything with heavy spices, like Mexican. 

    As for liquids, its water or milk with a little OJ (she won't drink plain WCM). No other liquids necessary IMO!

    I made a pitcher of "spa water" for myself with slices of cucumber and lemon and let it sit in the refrigerator overnight.  I gave DS a sip and he LOVED it!

  • I posted this the other day, but my DD looooves homemade black bean patties I make for her. She won't eat meat or a majority of veggies, so this is a way to get some protein and veg in her. I take one can drained/rinsed black beans and dump into food processor with 1 egg, whatever veggies I have (bell peppers, corn, cooked carrots, onions all work well) and seasonings (usually garlic powder, cumin, pepper). Pur?e till smooth and put into a bowl. Stir in enough dry bread crumbs (Ive used plain and whole grain) to firm up the mixture. Place in fridge for a few hours to firm up more. Saut? small patties in olive oil. Then I usually flash freeze them and store in ziplock bag.

  • I'm a terrible cook (and don't have much cooking space in our temporary rental) so I've been relying largely on foods that I can buy and heat up easily. I'm vegetarian so you could alter some of these with meat options:

    -Falafel (DD loves it!)
    - Meatless/Soyless meatballs from Whole Foods (in the freezer section - super easy!)
    -Quinoa Salad mixed with hummus
    - hummus is one of her all time favorite food so pretty much anything mixed with hummus. We do a lot of peas and carrots mixed with some hummus
    -Fried rice with tofu, veggies, beans
    -Annies version of Spaghetti O's with (the kind with Soy meatballs mixed in) and we add cooked veggies
    -Amy's Low Sodium California Veggie Burger (vegetarian and soy free - made from whole grains, mushrooms, vegetables, and walnuts)
