My grandparents babysat us kids once and fed us tongue and we loved it. I remember it being very tender. I also remember my mom being none too happy when she found out, haha. Which, now that I type that, seems weird to me. Why be upset about that? It's not like it was dessert for dinner or something, etc.
Anyway, I don't cook any of those things b/c I barely know how to cook meat as it is. Baby steps. I wouldn't NOT order something on a menu though. I like trying new things!

I've tried lengua and was not a fan, but I think it wasn't prepared well. Never tried tripas/menudo (I thought menudo was made from tripas?)...I dont think I'd be a fan of the texture, but if someone offered it to me, I'd give it a try.

I think menudo is the stomach lining because then tripas is cylindrical and menudo has texture and is flat.
We make beef tongue (which is for sale at WalMart, BTW, even in New England) all the time. Crock pot all day. Better than ANY slow cooked roast you've ever had. I made it for DH and he was quite apprehensive until he tried it. LOVE it now. We made it Wednesday. I've had tripe and it's OK. Never had eyes. Not a fan of menudo.

But, I'm pretty comfortable with the main "can find at the meat counter of your local grocery store".
Nothing beats a good old fashioned steak.
