? about making food ahead of time

Okay, so we really don't have parties very often so I'm not sure what I can make a day before and what I cant. (This is also the first time I've tried these recipes myself so that adds to my confusion.)

 We are having our girl's 1st birthday party tomorrow. I'm making ham roll-ups (ham with cream cheese wrapped around a pickle), and dried beef bagel dip (made with mayo, sour cream, spices, dried beef). 

Can I make either or both of these today in order to save on my time in the kitchen tomorrow? I don't want anything to get soggy or gross, so I'm wondering if anyone knows if it would be okay??

  • I would think both of those could be made today and kept in the fridge until tomorrow.

    I've had those ham roll ups before. They're weird, but delicious!

  • Both of those should be able to be made up in advance no problem!
  • I would think you could make them both today.

    The ham roll-ups sound kind of crazy... I can't wrap my head around it. Wink  But I'm a pretty picky eater.

  • I'm thinking the dip can most definitely be made early. The cream cheese plus pickle in the rolls make me think the texture might get funny...

  • I've made the pickle rolls many times.  I usually wrap the whole pickles on the day before and store in a covered container.  Then on the day of the party, I slice them up.  That way they get nice and chilled which makes slicing them easier.  Also, if you slice them the day before, you risk the pickle juice making the cream cheese all soggy.  Make sure you dry your pickles well before rolling, too.
