healthy, egg-free frosting?

I found a great egg-free cake recipe, but I'm having a hard time finding a recipe for frosting.  I'd like it to be somewhat healthy (made w/ juice, etc.)  Any tips??

  • Maybe you could tinker with a cream cheese frosting recipe to make it healthier? The one I used for DD's birthday cupcakes was cream cheese, butter, vanilla, and powdered sugar--no egg. Maybe you could cut down on the butter, and sweeten using limited sugar, or possibly juice... DD actually flipped her cupcake over and only ate part of the cake anyway, she did not like the texture of the frosting :)

  • I saw this on pinterest and we did it on our LO's pineapple cupcakes.

    You put a can of coconut milk in the fridge and allow it to cool. When it cools, it separates into coconut water on the bottom and coconut milk on the top. Scoop out the hardend milk part and whip for a couple of minutes. It turns into coconut whipped cream! He loved it!

  • If you aren't making a meringue icing, it shouldn't have eggs typically.  Unfortunately, most icings aren't what I'd consider healthy, but you could do a cream cheese frosting with lower-fat ingredients.  And if you want to avoid milk, thin it out with juice.  However, all frostings will have a good amount of powdered sugar so, that defeats the healthy idea!

    Totally agree Wink Also, the amount LO will actually ingest is likely to be minimal. That said, you could do something with whipped cream - then there wouldn't be extra butter or anything.

    Meringues are made with eggs (egg whites). I rarely make them because they are so much more finicky than a normal buttercream!

    I never considered Greek yogurt.  Thanks!  I found this:

    One cup of Greek yogurt
    One teaspoon of vanilla extract
    One-half cup of powdered sugar

    Sift powdered sugar into a mixing bowl.  Add yogurt and vanilla extract.  Blend until your mixture becomes smooth and thick.  Refrigerate for at least a half hour to allow it to thicken further.  This recipe will frost twenty-four cupcakes.

  • i've heard you can make icing with avocado...  i've never tried it though. 

    i have made an icing out of silken tofu with some powdered sugar and melted chocolate.   throw everything into a blender.  it turns out like a chocolate mousse, and it actually takes good as frosting on a cake.  i imagine if you used less sugar and chocolate, it would be on the healthier side as far as icings go.
