How many wool puddle pads for crib?

I am planning to use a wool puddle pad over my non waterproof crib mattress under a cotton mattress pad. At first, I thought I would need a minimum of 2 puddle pads as I thought I would need to wash it with each accident. But if the wool is not really absorbing much, maybe I need only 1?

Anyone have experience with this kind of bedding set up?

It sounds like you only need one, since most moisture will sit on top of it, you can soak any moisture up with a towel before you remake the bed.  You do not need to wash it after every accident.  Wool is great in that it doesn't get smelly.  If you let it air dry between accidents you should be able to go months between washings.  Make sure you are careful with the wool wash you use to clean it as it is the natural lanolin in the wool that makes it waterproof and if you use the wrong wool wash, it will strip the lanolin.
