I'm trying to plan ahead for DD2s arrival. What are some good meals I can prepare and freeze before cooking or cook and freeze that are good to reheat? I've thought of lasagna, chicken spaghetti, enchiladas, and chicken and rice. Any ideas?
At the moment, I've got lasagna, mexican lasagna, and chili and cornbread in the freezer. I plan on making coconut curry, shepherd's pie, and marinating meats in the next couple of weeks. I'm also going to make a ton of oatmeal pancakes this week - they reheat well and are really hearty.

We have Meatless Marinara, Meat Ragu, Lasagna, Homemade Mac'n'Cheese, Beef Stroganoff, French Onion soup, and banana bread that I made. We also keep easy things like pieroggies, veggie burgers, and frozen meats/fish in the house, for quick and easy meals.

I made shepard's pie, veggie lasagna, cut up all the veggies for crockpot chili, empanadas, and I have the stuff for tuna noodle in the cabinet (DH can handle that relatively effortlessly). I also have burgers, fish, shrimp, and chicken breast in the freezer.
I made a bunch of turkey meatballs for the freezer this weekend, I also like to cook big batches of meat seasoned for tacos, spaghetti etc & freeze it in meal-size portions that I can heat up quickly for dinner. And I made a big batch of cookie dough & froze it in pre-scooped portions so I can just make a quick tray of cookies whenever I want (the most important thing lol!)

I love the website www.onceamonthmom.com I made a bunch of the April and May meals when I did my freezer day last week. I love that they have a shopping list that you can print off and you can either make just the recipes you like or the whole menu for the month. I ended up making the twice baked potatoes, cheesy penne, chicken marsala, egg rolls, and bbq chicken.
