Dinner Ideas!

So, I'm working on meal planning for the next two weeks and need some recipe ideas!  I only have 4 so far and need at least 2 more. 

What I have so far:

Chicken stuffed crescent rolls

Meatloaf (with ground turkey instead of beef)

White chicken enchiladas

Chicken stroganoff

Obviously, we don't eat a lot of red meat but I'm open to any ideas!

    I don't know if you have access to a grill, but we grill out all of the time during the summer (fast, easy clean up, etc.) I often buy chicken breasts or boneless pork chops in bulk and then divide them up into freezer bags of 2-4. I dump in various marinades and freeze. Then when we just pull a baggie the night before we want to eat. Easy marinaded meats. We pair with asparagus/zuchinni/squash/potatoes that we grill in foil pouches.

    chicken (or veggie) quiche

    spaghetti (ground turkey)

    tacos (same)

    rice and beans

    stuffed shells

    thai peanut noodles

    baked ziti

    veggies burgers with oven fries

    Easiest chicken tacos ever:

     6 pieces boneless skinless chicken breast

    1 packet taco seasoning

    2 cups salsa

     

    Dump it all in the crockpot and cook on low for 6-8 hours.  Chicken should come out tender and moist enough to shred easily.  Shred it, serve on soft flour tortillas and top with guacamole & sour cream.  Yum!

    Fish tacos Wink

    Polenta pizza (polenta with marinara and any other toppings you like)

    Any sort of curry dish you might like
