  • Here is easy peasy:

    mix 2 tbsp honey and 3tbsp mustard.  Spread on 3lbs of chicken pieces skin side down.  Bake 40 minutes at 425 (I think?  I always have to look up how long.)  Take out once and turn, spreading more honey mustard mixture on top.   This is suprisingly good considering how easy it is.

  • I am a fan of putting Trader Joe's spice mix on some chicken and grilling it!  Then I make some coucous and call it a day!

  • From my once a month cooking book:

    Mix a packet of onion soup mix with a can of cranberry sauce (the kind with whole berries). Put chicken breasts in a baking dish and cover with the mixture. Bake, eat!

  • I love to do a curry with chicken - this one's really easy and delicious, and not overly spicy. Awesome served over fluffy rice.     Or another really easy thing to do with chicken is cube it and BBQ it on skewers with pineapple, mushrooms, garlic, red onion, red peppers, zucchini, etc. Yum! There's lots of great recipes online for marinades.
