I have found a lot of low carb meals that I want to try but most of them are for servings of eight. I know I could cut the recipe but I was thinking why not freeze the leftover for a quick meal on a busy night. I could potientially have half a month of dinners just by cooking a few meals. I just didn't know if there were any recommendations on how to do this or anything I shouldn't freeze than thaw. I'd appreciate any tips

I used to do that when I was single - I would make a whole lasagna or something and then break it into individual portions and freeze them either in foil or plasticware. Worked pretty well. Some things I would just put in the fridge instead of freezing - i.e. soup. I also made a lot of rice-like dishes in the crock-pot: risotto or a quinoa-based stew or something like that.
I had a friend who lived nearby and we used to trade dishes sometimes too when we made big portions of something. She wasn't the best cook in the world but her challah bread was to die for.

January PAL Siggy Challenge: Good Advice
I freeze and thaw a lot of leftovers. It's great for lunches. Usually I just freeze them in the quart sized ziploc freezer bags. That way I can squeeze all the air out.
The only thing I have not been able to freeze are potatoes. They always turn out mealy when I thaw them. Also onions seem to get stonger after freezing and green onions can turn mushy and black. Most other veggies do fine.
There are a ton of blogs out there for freezer meals and a bunch of stuff on pinterest. I like this blog: https://freezermealsforus.blogspot.com/
but it is mostly family size stuff but maybe you'll get some good ideas.

BFP on Cycle 17 09/27/12. EDD 06/04/12! Please Stick Baby! A/S 01/22/13 Baby looking great. Officially TEAM BLUE! Jack is getting a Baby Brother! RCS scheduled for 05/29/13. William Daryll born at 9:59am on 05/29/13. Left ovary and tube removed due to peach sized tumor found during RCS. Pathology came back benign!
