Alternative Cake Recipes???

I was thinking of posting this on the food allergy board, but it is dead over there!

DS is allergic to milk, soy, and eggs so he is getting cheated out of a lot of foods as it is. Does anyone have a homemade cake recipe that does not include those ingredients? I have heard of making cake with applesauce instead of milk, but I can't seem to find a good recipe. If anyone would like to share an alternative recipe Nolan and I would be grateful!   :) 

I don't care how unhealthy it is, I just want my son to be able to eat cake on his birthday!

  • Have you tried googling "vegan cake recipe"?  Those would all be egg and milk free, and you could always replace soy milk with rice milk or almond milk.  I googled and the first thing that came up was this vegan chocolate cake: https://allrecipes.com/recipe/vegan-chocolate-cake/  It looks really simple and doesn't have any odd ingredients.

    Thank you! I never even thought of looking up a vegan recipe until vigurl posted the link. I just have to go thru all of the ingredients and make sure that none of them are made in a factory or contain milk, eggs, and soy and then I will give the recipies a try!

  • DD2 had all of the allergies you listed {she out grew them by 14 months!} so we used a box of Cherrybrook Kitchen yellow cake mix (from Target) -- all you add is water & margarine. We also used their frosting -- also from Target -- and added rice milk as instructed (got the rice milk at either whole foods or trader joes, can't remember).

    Because it was her first cake she had no idea it was missing all the "good" stuff -- and it was easy on me!

    Thank you, I will have to take a trip to Target and pick up a box! I want to let him try all of the recipies before his birthday just so we don't risk an allergic reaction at his party.

  • i know you can take a cake mix and mix it with diet coke for chocolate cake and diet orange soda for vanilla cake and not use anything else it recommends (like milk oil or eggs) bake as directed and there u go!  i have made cupcakes this way before.

  • I definitely recommend the regular cake mix with a can of diet soda. I've done plain yellow cake with diet sunkist or chocolate cake with diet dr pepper but there are tons of other combinations. It is so easy and still tastes great

  • Thank you all for the suggestions. I can't buy a box of cake mix and add soda to it because the boxed mix contains soy and milk, so that is out of the question. Maybe if I look into different brands of cake mix I can find one without those ingredients tho!

  • I'm not sure about an egg substitute, but for Ev's birthday cake we used almond milk and shortening (or you could use vegan butter I'm sure. Earth Balance makes a good one) in a regular yellow cake recipe. It was denser than a regular cake (like the consistency of banana bread), but tasted really good. We used the vanilla almond milk, which I think helped.

    For the frosting we again used almond milk and vegan butter. I just googled vegan buttercream frosting recipes and there were quite a few.  It had a little bit of an aftertaste, but nothing Ev noticed since he's never had real frosting before. And it was nice and fluffy like regular frosting. He loved it, and he had no allergy problems and he ate a lot!
