Making my menu plan. I've got a bag (raw, peeled, deveined) in my freezer and almost no shrimp recipes pinned...help a mama out! Our go-to is shrimp enchiladas, but those are little involved for a weeknight.Easy is good!
From realsimple.com, I've made shrimp lo mein and lemony shrimp and white bean salad recently.
From food network, Greek Goddess Shrimp Salad (it's a pasta salad).
I also like shrimp tacos, I usually make a simple cabbage slaw, then just put that, the shrimp, cheese, tomato, etc. on a soft tortilla. You can also throw shrimp into any quesadilla/pasta recipe, pretty much.
Now I am hungry!

If it doesn't need to be super healthy, this recipe for Coconut Shrimp is awesome! https://simplyrecipes.com/recipes/coconut_shrimp_with_sweet_chili_mayo/
It's not too hard. I think deveining is the most time-consuming part and yours are already done!
Enjoy whatever you end up making.
