Have you tried a hat with straps that fasten under his chin? My DS doesn't like hats either, and will pull them off if he can, but I got one at Target that has straps that velcro under his chin, and fits pretty tightly to his head. He couldn't figure out how to get it off, fussed for a few minutes about it, and then seemed to forget it was there.
We have a hat with straps and he flips out. Full on tantrum and can pull it off eventually even if I tighten the straps.
The last time we were out, I put regular sunscreen on his head and it was a nasty mess. Sonadora, do you have that problem with the brand you use? Obviously, safety takes priority over vanity but it was pretty nasty looking.
My little man is the opposite. He wants his hat on ALL DAY!! Same with his shoes. He's even went to bed with both of them on a couple of nights. Last summer he wouldn't wear a hat though. A hat with a strap would last a little while, plus I would put sunscreen on his head. I did lotion and just spiked his hair with it.
H won't wear one either. We go outside with our comb & spray & then give him a great spike. For some reason the sunblock is an awesome form of hairspray!!

Yep, it's gross and greasy, but not much I can do about it since she won't wear her hat!

Of course, this wasn't an issue last year since she was still totally bald all last spring/summer. This year she looks like I've never ever washed the little bit of hair she has!
My LO isn't a huge fan of hats but we've noticed we can slip one on him when we walk outside and he is distracted by something. Sometimes he will notice pretty soon that he is wearing one and take it off. Other times he doesn't care. We just have a ball cap for him because he flips out with the straps under his chin.
I still use sunscreen underneath because he is so unpredictable.

Mine won't either, so she gets smothered in sunblock everytime we leave the house. :-)
B can easily pull off hats with tied straps.
