NBR: How do you cook your turkey??

My first time cooking the bird, and I have no idea what the best recipe to keep it moist and all of that. Anyone have some tried and true tricks? Thanks!

  • I cover the breast in cheesecloth soaked with butter and wine.

I also rub it all over with butter.. like I'm giving it a butter massage.

I use my mom's instructions with a little help on measurements from Martha Stewart.

  • DH makes an herb butter (unsalted butter+fresh herbs and garlic) and rubs it under the skin of the turkey.  He places slices of pancetta on the outside of the bird and inside the cavity, along with more herbs and garlic.  Cook at 325.  Our turkey is 13lbs and he is planning on it taking 3 hours- just temp a thigh to be sure its done.

Be sure to let it rest for a good 20 min or so, carve and serve.  Do not hold it in a warm oven, it will dry the breasts out.  Oh- and baste frequently during cooking.  GL!
