  • My mom and sisters keep telling me not to go overboard on the freezer meals.  Just stick what you have and don't make yourself crazy.  Its getting nicer and warmer out by the day...send the husband out to grill!  That being said...hamburger soup is delicious, easy to make, you can put anything in it..and it's very filling! When I defrost it I just add a little water to it and it stretches the broth and all of the favors come back out

  • I have been thinking about this as well. I must suck when it comes to nesting because I have absolutely no desire to cook and freeze meals, even though I know it will come in handy when LO arrives.

I think I might grab a few pre-made frozen meals like Lasagna and some things at Sams club that DH can just stick in the oven and heat. Also I am planning on DH doing some grilling as well, because I can always throw a quick veggie and some rolls in the oven to go with. I am heading to the store today and my thought is get stuff that is easy for at least the first 2 weeks, hopefully by then I will have a bit of a routine down and can go back to cooking for the family!

  • Agree with the grill. All winter/spring we have been stocking up on brats, hot dogs, hamburger patties, chicken breast, easy grill options. Then the DH will only have to stop and get buns, maybe a salad, and dinner will be very easy.

I do, however, have a few lasagnas, garlic bread, and other freezer meals ready for rainy days.

  • - I cooked up ground meat (I do turkey but beef would work) and ground carrots/zuchinni. I use this as a base for a lot of stuff - spaghetti, sloppy joes etc. So I just froze that in bags.

    - Quinoa stuffed green peppers

-DD loves split pea soup (she is weird) so I froze that in muffin size portions for her

    -meatloaf

-I also portioned chicken breasts and added marinade so they are all ready for the grill

  • If you have a crock pot, you could always just get some chicken breasts and chop up some veggies, mix it up, and put it in a freezer bag.  The day you want to eat it, just pop it in the crock pot...I did a few bags for my freezer.
  • I made a bunch of yummy things

-twice baked potatoes (just freeze after baking the first time)

-pizza stuffed pretzels (freeze before cooking)

    -tons of crock pot meals

-a bunch of loaves of yummy homemade bread (garlic gruyere and greek bread with feta and kalamata olives)

I know our church will be bring over tons of casserole type things so I avoided making any of those.  The crockpot meals are especially nice because in the hot summer, we won't have to turn on the stove...

  • Go to Sam's Club - They have LOTS of family sized frozen meals... from Chinese to Italian to you-name-it!  I stocked up on frozen veggies (stir fry veggies), frozen chicken, and some lasagna!

  • Freeze anything, really. When I have leftovers, I freeze them. Even if it's just a serving or two, it will be something someone can eat. Last night I stuck half a pork chop and some veggie pasta in the freezer because it will be a perfect easy meal for my 3 year old. I have no desire to stock my freezer with huge pans of anything, because I don't want to eat anything for several meals in a row!

Other than that I'm doing a few crockpot ready freezer meals that can just thaw a bit and then go straight in to cook. Super easy!

  • Do you have family around? I told my mom (okay I ASKED my mom) if she would be willing to start dinner (and/or cook dinner) for us when she comes over.. she was more than willing to agree to that :) But my mom lives close and I know that she will be here all the time after baby comes, which is why that was an option for me!
