I'm in a dinner rut...

Anyone want to help? I feel so uninspired about my dinners lately. Does anyone have any good, healthy recipes they'd like to share? I'm not a huge red meat fan but do like chicken, pork, and turkey. 

I'm headed out the door right now but appreciate the help!

    I'm new here so this is actually my first post to the board.  I'm hoping to become more involved in the coming weeks and months!

  • I put a whole chicken in the crock pot this morning with a creole seasoning and lawry's rub on it. Should be fall off the bone tender by the time SO is home. Now I need to figure out what to cook with it. Maybe some black eyed peas and rice? =)

  • Here is the recipe for Slow Cooker Chicken Tacos it serves 4-6

    Ingredient
    1 pound boneless, skinless chicken breasts (about 3-4)
    3 garlic cloves, minced
    1 cup prepared tomato salsa, plus more for serving
    1 to 2 tablespoons chopped canned chipotle chiles in adobo (more or less, depending on your preferred spice level)
    1 cup chicken stock
    1 tablespoon cumin
    1 tablespoon dried oregano
    2 tablespoons all-purpose flour
    1 teaspoon kosher salt
    1 teaspoon freshly ground pepper
    1 can of pinto bean, rinsed and drained
    Taco shells, hard or soft
    Chopped cilantro, shredded cheese, lime wedges and sour cream for serving

    1. In a 5-6 quart slow cooker, stir together salsa, garlic, chipotle chipes, cumin, oregano, salt, pepper, flour and chicken stock. Arrange chicken breasts on top
    2. Cover and cook on high heat for 3 hours or on low heat for 6 hours
    3. Stir in beans during last 1/2 hour of cooking
    4. Transfer chicken breasts to a serving bowl and shred, using two forks; return to slow cooker and stir well.

  • I also like to put about 5 chicken breasts in the crock pot with a can of rotel and green chilies, cook for about 7 hours on low and then take a fork and shred the chicken, let it cook another 30 minutes or so. Then put it on burrito shells with shredded cheese and your favorite burrito toppings. Yummy!! One of my favorites!

     Also if you know someone that sells Tastefully Simple (you can buy online too) I would highly recommend getting the Seasoned Salt. I put it on everything from chicken breast to salads. It gives it a good flavor without a lot of hassle!

    I do something similar.  I use salsa, a slicer pepper and an onion.  It is so good!  Sometimes I will just eat it over rice.

  • I'm in a rut, too.

    Some of my favorite recipes are cheeseburger meatloaf and taco lasagna.  Both are tasty and easy, and you can use lean beef or turkey and they're not too bad fat/calorie wise.
