One of the easiest dinners I make is the following:

    1 can crescent dough rolls
1 block cream cheese (I use 1/3 less fat and it's just as yummy)
2 shredded chicken breast (or 1 large canned chicken - I do this when I don't feel like cooking the chicken)
Garlic powder to taste (I like a lot of garlic, so probably put 1 tbs-ish?)

Mix all ingredients well and fill into a crescent roll. Cook according to crescent roll directions.

You can change it up by adding shredded cheese or dry ranch mix.

    Enjoy!

For me tonight I'm going out with the girls.  Here is an easy recipe that my husband loves:

Get a rotisserie chicken from the grocery store (I like the lemmon pepper).  Pull off the meat and chop it up.  Mix in with chopped up veggies that you have on hand like carrots, broccoli, squash or whatever.  Add shredded gruyere cheese, salt and pepper to taste.  Cut a sheet of puff pastry into quarters and add enough mixture to fill when you fold it in half to make a triangle.  Smoosh the edges together with a fork.  Bake at 375 for 10-15 minutes.  These freeze beautifully too.  I served small versions for a wedding I helped cater and they were a big hit.  We serve them with stone ground mustard for dipping.

  •  I'm not sure I will be eating tonight.  Pretty nauseous after chemo but what about chicken teriyaki and sweet carrots and rice?  That's a staple in my household. I make my own sauce (which takes all of 5 min) and marinade the chicken with sauce and cook in the sauce too. I'll be glad to share sauce recipe if you want it

    Teriyaki sauce:

    1/2 c. soy sauce
    1/2 c. pineapple juice
    1/2 tsp. ginger
    1/2 tsp. onion powder

    1/8 tsp. garlic powder

add a few tbs of brown sugar and lots of honey depending on how sweet you like it.  Also I noticed that I like it way better with low sodium soy sauce then regular but you can use regular.  I recommend marinading the chicken chunks in the sauce for a couple of hours before cooking and you'll have enough sauce still to bottle some up and stick in the fridge.

ETA - I usually make with chicken but you can make it with steak or shrimp or whatever

  • Thank you Pulga!

    Thank you Pulga!

You're welcome. Hope you enjoy! I make some darn good sauces (award winning bbq sauce etc) and am always making this teriyaki for people.

  • We just has soup and grilled cheese since DH has a cold...

I'm definitely going to be trying that sauce Pulga, sounds delicious. Thanks for sharing!
