-2 large chicken breasts cut into 1" cubes, seasoned to taste (I usually use essence of Emeril)
-1 medium onion chopped
-2 cans low-sodium black beans
-2 cans of diced tomatoes with green chiles
-1/2 bag of frozen corn
Place all of the ingredients into the crock pot and simmer on low for 6hrs. DH loves it and requests it all the time. The original recipe only calls for 1 can each of the black beans and tomatoes, but we like the extra veggies. You can make it on the stove in a pinch, and it's really yummy when served over brown rice.
