We took DD last March. She was a little over 1 1/2. I packed lots of snacks and toys that she normally doesn't play with (that are water safe). We layed down a blanket in the middle of the canoe for her to sit on and she had her own little space with all her toys. It worked out well because she did not want to swim (the water was freezing) when we stopped so she sat on shore playing while we were in the water. I made sure to have her wear a cover-all over her suit, a sun hat, lots of sun screen and water shoes. Don't forget swim diapers! Have fun. DD liked seeing the fish, we saw some manatees, otters, and turtles.

We went last summer (DD was not 2 yet). She was pretty content with eating her snacks and feeding the fish.
I would pack a lot of snacks and drinks... I think your idea of stopping is a good idea!
