I don't get much time alone without interruption from both LO's but I "think" I may have some time on Thurs or Fri sans kiddos that I could make the cupcakes and cake for DS2's 1st bday party on Sunday afternoon. But is that too soon???? I don't want our guests eating stalled cake. LOL They would be kept in those cases that you transport cakes/cupcakes around in (I think Wilton sells them).

I guess I should clarify--it's not just making the cakes--but actually decorating that I want to do. There is a lot of work for me to put in to them (making individual little piggies for everyone to go along with the theme)--and just wondered if it would holdup. I'm thinking no since most of you since to freeze it until Saturday or Sunday.

You can make the cake that early, just wrap the cooled cake very well with plastic wrap and freeze it.Take the cake out the day before to thaw and do the icing then. The cake will still be moist.
