Have you considered the Raw Diet? Definitely veg friendly and most of the carbs are plant based. If you are trying to avoid sugars, you can just opt out of the raw fruits.
Also the Atkins diet has a veg friendly section on their website that might be pretty useful.
I've been vegetarian for about 9yrs1/2...its not hard if you like veggies. If not, then you can get stuck on eating carbs and thats not good. There are good vegetarian recipe books out there.
At every meal, fill your plate with lots of veggies and have protein at each meal (eggs, nuts, tofu, pumpkin seeds, beans).
I don't believe in low-carb diets. Just cut (or reduce) the bad carbs like potatoes, white bread, sugars, white rice. Grains like quinoa, oatmeal, and cous cous are good for you.
I eat low carb via Atkins, and while I'm not vegetarian, it's definitely very doable.
The book New Atkins for a New You has a section for vegetarians, including sample menus. The book admits it would be fairly difficult to do while vegan.
