So from what I've read you pump breast milk in to bottles, but then theres the breast milk bags so do you pour the milk from the bottles in to the bags or can you just freeze the bottles (assuming you had enough)?
I froze the breastmilk in small capsule containers from the hospital, and then I warmed up the containers when I was going to use the breastmilk. The small capule containers from the hospital had a nipple that could be put on them. So I would imagine that if you have a cap for your bottles, then you could freeze them, warm them up, and then put on the nipple to the bottle. I only did this for a month since my son was a preemie, and I needed to take frozen breastmilk to the hospital. And the hospital needed to store my breastmilk. When I went back to work after my 6 weeks maternity leave, we just went to formula which was easier for me.

You could, but most of the time you don't have enough to fill a bottle so it's a waste of space. With the bags, you just freeze them flat and then you can stand them up in an organizer. You can't mix room temp BM with frozen/cool BM, so using bottles is just not practical unless you have a deep freeze with lots of room. Also, freezing and reheating bottles repeatedly can break down the plastic.
When I pumped I would pour the milk from the bottle/pump to a freezer bag. Obviously disposable freezer bags are cheaper to store/freeze than stocking up on bottles for storage (some women have great supply and have freezers full of milk). I know some people freeze it in ice cube trays too, and then transfer the cubes to a freezer bag.
If you are exclusively pumping (as I did with both) you end up with alot of milk stockpiled. There would be no way to fit that many bottles in a freezer (and would be very expensive).
You could do if you were just occasionally pumping - but then it would always be a question of how much you should be putting in each bottle to freeze (how much would baby want). The freezer bags worked really well as you could defrost them in the fridge (although this needs to be planned ahead due to it taking a number of hours/day) and then just pour the amount you wanted in a bottle and warm to room temperature (and then use up the rest the next feed for example - frozen BM should be used within 12-24 hours once thawed (I seem to recall), assuming it's done so in the fridge, if done so by warming it you should be using it all right away). Because of this I only ever froze about 2 feeds per freezer bag (I did have a good supply and would usually pump about 8oz a session - and both DD's only took around 4oz per feed until 6ish months).
