DS wont touch meat. We've tried every type in every format and the kid will either refuse to eat or will eat the non meat food in the dish.
He also refuses eggs.
I know beans is an option but how do you cook them... I hate them with a passion so never learned to cook them.
His sister was a carnivore so I could just give her meat and we'd go on our merry way.

I soak my beans overnight, then stick them in the crockpot in the morning covered with water and throw in spices in the last hour of cooking. Usually cumin, corriander, black pepper, chilli powder and salt. Because we make them for DS I put in salt when I serve it for hubby and me.
In the BLW cookbook (which I borrowed from the library before I bought it myself so you could see if your library has it) there is a recipe for Moroccan chicken with chickpeas that we really like.
Also you could try canned tuna in oil or spring water as a protein source.
I also do hummus on rice crackers which he likes well enough.
I want to do eggy bread (french toast) that should be protien-y too. I read that you can also give babies cut up pieces of tofu and I will be trying that soon in a mild thai curry.

Do you have a Trader Joe's nearby? DS loves these frozen tofu "nuggets" that have edamame in them. We do cubed tofu and smushed edamame too.
TJs also has organic canned black beans. I just drain the liquid and heat up, then he goes to town.
DD loved these as a baby - and a good way to hide chicken. You can actually puree the chicken and blend it in so he won't be able to pick around it.
Cauliflower and broccoli are also great (baby-friendly) veggies that are high in protein.
