DD moved to her convertable carseat recently (Britax Roundabout55) and my SIL wants to take her shopping tonight. Do I move the whole seat into SIL's car? Does SIL take my car? How does this work? Sorry, FTM here and SIL's kids are much older so she can't remember!

It's up to you. If she still fits in the infant seat and you have it handy, that's an option. I bought a spare seat for situations like this. The Cosco Scenera is a great, cheap spare seat.
Personally, I would just have her take your car if you're comfortbale with that.
I don't have children yet, but I've babysit regularly for a family for about 6 years now. I always just take her car when we need to go places because I know it's easier than moving around carseats
