c) my mom will be coming over to stay for a little bit after the first two weeks, so I know that she will be willing to help with the cooking as well..
I do a lot of crockpot freezer meals. I just put them in ziplock bags so I can easily store much more. I have done things like salsa chicken, italian beef, steak fajitas. By the time I'm done I will probably have a months worth of meals. Not nightly of course, but that's including making a meal and then having leftovers for a couple of days.
As many as will fit into my freezer. We won't be having much help at first and the midwives don't even want Mom and Baby leaving the house for the first two weeks... DH plans on enforcing that this time (I wasn't told that the first time around and we left a few times with no ill effects).
Instead of freezing large batches of meals, I've been making single batches and splitting it in two. So when I made vegetable lasagna two weeks ago, we had 1/2 of it that night (w/ leftovers the next day) and I froze the other half... it will be enough for a dinner and lunch for us too. So far, I have the Vegetable Lasagna, a Black Bean Tortilla Casserole and a few servings of soups (Split Pea is one and Spinach Tomato Orzo is another) that I'm saving for post-Baby. I plan to make a batch of red beans for red beans and rice that I will freeze part of too. (a qt zipper bag is enough for us all to eat dinner and DH have leftovers)
I put together a list of meals I can prep/freeze for the crock pot ahead of time too. Chop up all the veggies and label the bag with what it is and what else needs to be done. If I buy any dry/canned goods ahead of time, then I just need to think about meat.
I'm REALLY hoping DH gets me a deep freezer soon!

DH is a teacher, so will be off in the summer. I am planning on doing a months worth of meals so that will take care of suppers in June until he gets off work.
I am doing what one poster suggested-making extra now, then freezing the extra in zip lock bags (works good for soup/chili/crock pot stuff). I'm also making big batches of chili and putting them in individual containers for DH to take to work. I don't want him to be reduced to having McDonalds everyday! When we make whole chicken or turkey, we simmer the carcass to make stock, then put in veggies and meat and make homemade soup. Those go into individual containers as well. Space isn't a problem for me so I'm making as much as I can!
