What kinds of fruits/veggies would be good for pancakes?

DS is having a hard time picking up fruits off his tray (they just kind of slide every where and I end up putting them in his mouth or he gets really upset) so instead of giving him fruit puree and pancakes i thought it would be fun to make some pancakes with apples and blueberries and freezing them. What do you think are some good combos? I overheard a lady saying she puts kale, apples and mozz cheese and i thought that sounded good (well maybe not kale but idk) also are there any rules to freezing?

  • You can try rolling the pieces of fruit in crushed cherrios.  I did this with DD and DS when they were first learning to feed themselves and they loved it.  I just put some cheerios in a zip lock bag then rolled a rolling pin over it a few times and then poured a little bit over their fruit as needed, mostly just with bananas though since they are the hardest to pick up.

    The only things I've ever put into pancakes are blueberries or mashed bananas.

  • I know this is not quite your question, but if you fry them in a healthy oil (like peanut or hazelnut oil), lots of vegetables can be grated and then fried in a pancake form, even without all that pointless flour.  Just add beaten egg to hold it together, and it's a fantastic way to get veggies into a picky eater. Besides the old potato pancakes, I've made or heard of sweet potato, zucchini, parsnip, and carrot all being fried into pancakes.

    i almost bought wheat germ today to do this, I think that would have the same effect (wholesomebabyfood.com seems to be all about it) thanks for the idea maybe I can wing it with some of his puffs)

    I'm about to introduce pancakes too.  What about  shredded zucchini or carrots?  You could also do chopped spinach, banana, apple sauce, berries.

    We had the same problem with food sliding on the tray then I found this great bowl at Marshall's made by "vital baby" that has a removable suction cup.  She has no trouble getting slippery finger foods out of the bowl and the bowl stays put. 

  • We've done pancakes with bananas, sweet potato and squash. DS liked them all. I'm sure you can try almost anything in pancakes.

  • My DD loves sweet potato and apple pancakes!  Honestly I don't mind them myself.

    As for picking up his fruit, I used to sprinkle DD's banana and other slippery foods with ground flax seed.  Adds the needed texture and offers some health benefits too!

    I like your cheerio idea. Thanks for sharing. My DS has trouble picking up fruits too.
