Your favorite easy-to-make meal

Would anyone like to share their favorite easy-to-make meal?  And by easy, I mean EASY.  Boiling water is a chore for me.  I hate to cook (!) but I have this whole week off and I would like to get some food prepared.  I feel like we're stuck in a dull cycle of green beans, toast and anything with cheese for DS and I want to offer more things.  Bonus points if you can suggest something new that involves cheese (DS could just eat cheese all.day.long.)   Are there any websites you recommend for recipes?

  • I know what you mean. I am in a rut too... My litttle one loves chicken noodle soup with the big chunky noodles. Easy finger food and I then make toast and dip in the broth .. LOVES IT!

  • DS loves blueberry pancakes. I use lots of blueberries since they're so good for him. I usually make a double batch and then freeze them in 3's for future meals.

    Yesterday I pur?ed some black beans, cheddar cheese, garlic, and a little olive oil to make a healthy spread to put on toast. I can get a few meals out of it since I made a lot. 

  • whole what pasta with ragu (garden veggie) and buy store bought meatballs.  Super easy!

    You can also give bread or garlic bread and put shredded cheese on it, or on top of the noodles.  You get something from every food group.

  • I have a few.

    1) spagetti/noodles with meatballs and marinara

    I pre-make looooads of meatballs and freeze. Groundbeef, eggs, a few seasonings and parmesan cheese. I cook a whole batch that way all I need to do is make noodles, microwave a jar of ragu and meatballs in the oven for 10 minutes fromt he freezer.

     

    2) BBQ chicken and cheese quesadilla

    Cook chicken breasts and shred chicken. Store bought chicken would work too re-cooked. add bbq sauce and just heat so it's hot in microwave. take two totilla wraps and place bbq chicken and some shredded cheese on top then we cook on the grill outside.

     

    3) Lemon Chicken with Capers

    Coat chicken breasts with beaten egg and dip in flour. Place in skillett 15-20 mins till cooked. Add lemon juice, capers and butter and serve over Orzo. (this is an acquired taste with capers but LO loves this too)

     

    4) sadly.. Macaroni and cheese with green beans!

    5) sweet potato fries

    peel and cut sweet potatoes into french fries/wedges. Coat with olive oil, small amount brown sugar, cumin and pepper then place in oven for approx 20 mins.

    I have soooo many more.. most of these don't take too long and I really hate all the recipes that have half of the ingredients I never have actually in the house! I can usually find what I am looking for on this site. 'usually'

  • Hm... things with cheese...

    Mac and cheese. Make pasta (I use ditalini pasta), throw in a few handfuls of mild cheddar and some milk. Done.

    Grilled cheese sammich (wheat bread and american cheese). I cut broccoli really small and put it inbetween the cheese slices.

    Ravioli. Buy frozen. Cook according to the directions. Add some marinara. It makes a mess but the kid loves it.

    Steam broccoli and put some shredded cheddar on top while it's still hot. Let cool and give to the kid.

    Omelettes. DS loves egg, cheddar, ham and veggies.

    Quesadillas. Ours are usually wheat or corn tortillas, cheddar, shredded chicken and some veggies.

    That's all I can think of with cheese right now. A thin layer of peanut butter on wheat bread is a winner at our house.

  • crack an egg in a coffee mug and spinkle some cheese in it and pop it in the microwave for 45 seconds

  • Frozen (well toasted, but from the freezer section)Kashi whole wheat waffle spread with avocado.  My girls LOVE this.

    Mac and Cheese with diced broccoli and califlower

    The frozen skillet meals.  I just served a bowtie pasta with spinach.  All you have to do is pour in the skillet and stir until hot.

    Nuke a sweet potato (make sure to wash and stab with a fork several times) for about 8 min. depending on size.  Mash up with some butter and cinnamon.  Leave chunky and he can feed it to himself.

    Instant oatmeal.  Add a little milk and cinnamon.  Leave chunky and it becomes a finger food.

  • we call this "slop" at our house, but LO loves it. 

    ground turkey, refried beans, cut up potatoes & sweet corn kernels all mixed into one filling meal.  the adults eat it with garlic bread, but LO loves it as is.

    delicious & filling!
