Easy casseroles or 1 pan dishes

Can you share your favorite casserole or one pan type dishes. I hate cleaning up a ton of pans when cooking, but the same-old-same-old things I normally make are getting a bit old.

  • I've been getting by with one pan a lot since we went low carb and started using the steamer bags of veggies. 

    I used to love to saute up some chicken breasts, and whatever veggies I was using that day (maybe onions, mushrooms, celery) in a big pot.  When those had some color on them, I would add cream of chicken, cream of celery, some chicken broth and a bag of mixed veggies.  (some paprika and basil too).  Then I would make up bisquik dumpling batter according to the recipe on the side of the box...you spoon the dough on, cook it 10 mins with the lid off and then 10 mins with the lid on (no peeking!! its important) and then you have this lovely, super homey meal full of veggies :)  

    We also liked what we affectionately termed "mexican slop".   saute up your meat of choice (sometimes I used a sausage, sometimes beef, sometimes chicken) and a little bit of onion, add chili powder, cumin, salt, pepper, red pepper flakes if you like spice, then dump in a large can of tomatos, a can of corn and a can of black beans.  Add in some instant rice to cook in the tomato juice.  I served it in a bowl topped with sour cream, a little bit of cheese or maybe some avocado depending on what I had and what I was in the mood for. 

    crockpot stuff - you can't beat the salsa chicken recipe...serve it over rice one night, in a quesadilla the next...yum!!   (chicken breasts, taco seasoning, lowfat cream cheese, and a jar of salsa, shred when done...you can also dump in corn and or beans too...)

  • I really like making this dish. It's chicken breast, green beans, and red potatoes all in one dish seasoned with garlic and lemon. For me I find that everything cooks in about 40 minutes in my oven so your cooking time may vary a bit. I also have used frozen green beans because some times I go food shopping but can't make the dish until 5 days later. I just let them thaw out for a few hours before hand.

  • I do lots of pasta with veggies and protein in one pot.  Cook up the chicken or whatever and remove from the pan.  While its resting and then while you're slicing it, cook the pasta.  You can cook veggies either with the protein or pasta depending On whether you prefer to saut? or boil.  Drain, dump it all back together, and add sauce :)

  • We do a quick stir fry with mushrooms, onions, bell pepper strips, and chicken.  Season with a little teryaki or soy sauce, then serve over frozen/steamer brown rice.

  • This is not the healthiest meal, but it is awesome comfort food.  I usually grill extra chicken and make this with the leftovers (and leave out the onions) to make it even easier.   Chicken Supreme (The picture looks gross and nothing like how mine turns out!)

    We also make a lot of baked ziti.  I will grill up some Italian sausage the night before.  Then mix together cooked ziti (or penne, or whatever) with marinara sauce (homemade or from a jar),  the sliced sausage, and about half a cup of grated parmesan cheese.  Top with sliced mozzarella cheese, and bake at 350 for about 30 minutes.  The girls LOVE this.
