TTC After a Loss

Cooking: Help me think of a side dish!!!

I just put pork chops in the oven to bake. I seasoned it with pomegranate balsamic vinegar, some brown sugar, allspice, and sage. I'm trying to be low carb here... What would be a good side dish? I don't normally cook pork at all (half Jewish!) so I'm blanking out!

  • Stovetop stuffing is one carb serving for a generous portion and is very quick!

  • We always do applesauce, green beans, and baked potatoes with pork chops. Looks like the potatoes are out though so really this is no help. I am going to say that pork chops are by far my favorite and I am probably going to steal this recipe idea from you Smile

  • I don't know that you'd have all the ingredients for this at home, but my husband LOVES these (as do I) Asparagus with Basil Pesto

    A salad with some sweetness would be good, like spinach, apples, walnuts, and goat cheese. Use that same balsamic vinegar for dressing. Yum.

  • Almost every time I cook pork, I have potatoes with it. Green beans or broccoli would be good too.

  • You GUYS! We need a TTCAL cookbook! I didn't have the ingredients for most of these ideas but I'm totally saving them for later! 

    What I ended up doing: I'm cooking carrots in water seasoned with orange peel, ginger, and dill. Also, I'm making quinoa which IS a grain but it has a lower glycemic index than most and is a complete protein as well. I'm cooking that up in a lamb broth I had and threw in some parsley.

    I usually do black eyed peas with pork chops. I do a spinach salad that has dried cherries, crumbled bacon, thinly sliced red onion, a little parmesan cheese and a basalmic vinegrette. I'm not a huge spinach fan, but this I can eat all day long.
