I'd go with Emmie. If you didn't want the -e sound at the end then what would be the point of putting the letter there. I don't know what sound you are going for though, OP.
My DD name is Emmaline, and we usually call her Emmy. People have spelled it Emmie before but never Emme. But I if I saw Emme, I would say Emmie/Emmy. FYI- most people think we are saying Emily.
