I have made the Paula Deen one and got a ton of compliments. IT was super moist but it was a pain to make.

I recently doctored a boxed mix for red velvet cupcakes and they were awesome:
boxed mix
3 eggs
1/2 c oil
1/2 c water
one pkg instant vanilla pudding (not sugar free)
1 c sour cream
I baked them as directed (350 for 19 min but it's probably different for cake)
I couple of other tips I came across were all allowing the eggs to warm to room temp and only mixing for 2 minutes.
