I need lunch help

My 3 year old is the worlds pickiest eater.  It is beyond difficult to get him to eat much of anything.  He has a few favorite foods but all of them require cooking except for PBJ sandwiches.  Unfortunately his preschool is a nut free zone.  I understand the need for this but now I have no idea what to do about lunch for my DS.

I need some ideas to try.  What are some of your kids favorite lunches?

  • If the foods require cooking, you can always cook them, freeze them in portion sizes, and defrost them for lunch. As for the peanut butter, have you tried an alternative such as soy nut butter?  My DD likes cream cheese and jelly sandwiches - same texture, different flavor.

  • Will they heat meals for him? Can you send hot stuff in a thermos? Have you tried sunflower seed butter?

I haven't tried soy nut butter but I'm not sure if that would follow under their no nut rule.  I'll have to ask.  The cream cheese and jelly is a great idea.  I'll give that a try.  Thanks!

I make pumpkin seed butter, which IMO tastes a lot like peanut butter, and is nut free and fine. Just buy pumpkin seeds, pour a generous amount of oil on it, roast at 375 for 5 minutes, stir, then another 3-4 min (spread thin on a baking sheet). Then toss it all, oil and all, in the food processor and let it spin for a couple minutes. Then lightly salt, add a few squeezes of honey, and drizzle with oil until it is a tad runny. Store in fridge and it will firm up but still be spreadable. HTH!

    That sounds really tasty :)
