MIL is coming in this weekend with her new boyfriend (a cowboy named Keith. True story.). They are arriving Thursday night for dinner so that we can meet Keith before they keep DD out of school together on Friday. Since I get home at 5:15 at the earliest, (and I'd rather not serve this guy a frozen skillet meal for the first time we meet him), I need to have dinner pretty much ready to go.
Oh, and I got a new crock pot for Christmas. It's the kind that has a timer and switches to "warm" when it's done cooking. Oh, and I haven't used it yet. So this will be the first use.
Please give me a company-worthy, impossible-to-screw-up CP recipe, por favor.

Well, previously MIL has always turned her nose up at KA tacos. Because they're, you know, not Russian food. (eyerolleyerolleyeroll). But, since her new BF is a Texan, I'm now wondering if she'll be on better behavior trying to impress him. Hmm.........
how about pork bbq sandwhiches? i take a boston butt roast, fill the crock pot 3/4 or so the way with root beer. cook all day, maybe 8-9 hours. drain the crock pot and add a bottle of your fav bbq sauce. heat until warmed through. i like the heb brand carolina style sauce.
most other crock pot meals are just meh to me. they are fine for an easy dinner, but not company worthy to me.
Put everything in the crockpot, try to keep the garlic on top of the pork. I add more than the 3T of soy sauce.
Low for 4 hrs (I've gone way longer and it was fine). Serve over polenta (premade + cream cheese + chicken stock) or mashed potatoes.
By the time the pork comes out, it's very tender. You can slice it, but most likely it will come out in big chunks. The cooking liquid can be poured over the meat/starch.
pot roast!
I don't really have a recipe. But here is what I do. Salt and pepper the meat, sear on a very hot skillet on both sides (on the stove top) beef roast (I usually use chuck roast but know some people like to use top or bottom round roast, if you prefer pork that is good too). You just want to get a nice color, browned, on both sides. Then trow it in the crockpot pour lipton onion soup mix on top, then throw in potatoes and baby carrots. Add about a cup of liquid (can be water, beef broth, red wine- really whatever you prefer).

Pork Pozole! I get cheers every time I serve it and it is very company-worthy. I got it from a Nestie Cookbook we did WAAAAY back in 2006. It is from a Nestie named Maribel 922.
The only changes I make are corn instead of hominy (just not a fan). I serve it with tortillas so you can either roll up your own taco or just use the tortilla like bread and eat it like a stew. I also have shredded cheese on the table so it can be added on top. SO YUMMY and SO EASY!!

1 Tablespoon veg. oil
approx 2 lbs. boneless short ribs
1 can diced tomatoes w/ green peppers and onions
3 oz tomato paste w/ basil, garlic and oregano (or the can that says italian herb)
1 med onion, cut into 8 wedges
1 med green pepper, sliced
1 medium carrot, sliced
1/2 teaspoon dried orgegano
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup chopped parsley ( I dont use this)
Cooked egg noodles
1- In large nonstick skillet over medium-high heat, place oil until hot. Cook shortribs until brown on all sides ( I skip this step. I do not notice a difference in taste)
2- coat cp w/ cooking spray. Add short ribs. Top w/ remaining ingredients except parsley and noodles
3- Cover. Cook on high for 5 1/2 hrs. serve over cooked egg noodles. I usually let it cook on low for about 8 hrs.
You dont have to use egg noodles, but I think their yummy w/ the short ribs!
This is one of the best dishes I've ever made and/or eaten. Sorry I can't make clicky. You can tone down the spice some, but I don't recommend it. It's so so so good. I've made it once a week since I discovered the recipe and not a bite goes to waste. This last week I left out the Bok Choy and just made some kale chips on the side. I serve the pork over Jasmine Rice, but think I might try some rice noodles and broccoli next time.
