I agree with you guys - when I'm making chicken in the crock pot (KA tacos, for example) then I don't need to use the mixer either.
I mostly use it when I boil plain chicken breasts and then shred for things like enchiladas, buffalo chicken dip or soup.

TELL ME MORE!! I've seen a few recipes out there but there's a huge variety in terms of ingrediants. What's your go-to recipe?

The only thing I change is the chicken - canned chicken weirds me out for some reason, so I substitute boiled/shredded chicken.
