We have friends coming over for dinner tomorrow. One is a chef and of course, I offered to make dinner since he cooks all day. I bought everything to make the pork dish that I raved about a couple of weeks ago and he just wrote to say that he eats everything but pork. Sh!t.
HELP! I have no energy to google/pinterest/think right now.
Please help me save dinner. I want something delicious and as easy as possible, yet impressive. Crock-pot is a plus so I can do most of the work in the morning when DD is in daycare. I like one-pot meals, but am open to anything. That's not a req. though but if it's not make-ahead then it needs to be prep-as-much-ahead as DH won't be home till just before dinner and I can't get much done with DD around.

I made these beer braised chicken thighs this week and thought they were terrific. They're fairly easy, and cook for about an hour...not sure if that'd work with your timing.
Another chicken thigh recipe I love is this one for jerk chicken. I don't have a link, but basically you can make the marinade in the morning, marinate the chicken all day and then grill (I use a cuisnart griddler, like a panini press). To make the marinade throw the following in the food processor:
2 Tbsp fresh lime juice
2 Tbsp cilantro, fresh, chopped
1 Tbsp soy sauce
1 Tbsp sugar
1 clove(s) (medium) garlic clove(s)
1 tsp ginger root, fresh, peeled and grated
1 small jalape?o pepper(s), coarsely chopped
3/4 tsp ground allspice
1/8 tsp ground nutmeg
I serve both over white rice with a green veggie or salad.

I don't know what the recipe was, but could you not just use the same one and sub in chicken for pork. I find that it recipes for pork ad chicken usually work well for the other too. Although saying that if it was a crockpot recipe I would not do it. I have found very few crockpot recipes that are ok with chicken.
Another easy but tasty idea is I made this tonight. I subbed onions for leeks and only used zucchini (because that i what I had) I served it with a grilled marinated (just marinaded a few hours in Italian dressing) chicken breast. Very good and very simple to make, close to a one pot meal.
