So dinner has been a problem for a while now. Cooking is hard for me--I can cook meat, but I have a hard time eating it. DH has a bunch of tests right now, so he doesn't have a ton of time to cook. The crockpot, our normal go-to for easy, is out because I can't handle the smell of food cooking all day. The one thing we've found that works well is easy casseroles or something like a frozen lasagna. Last week I made chicken rice casserole (four ingredients, super easy) and that was good because I didn't have to watch anything cook. I think that's my main problem.
So anyway. Do you guys have any easy dinner casseroles that don't require a lot of prep or pre-cooking?

We just cut up some root veggies while browning some sausage (left whole)
mix 1/2 cup of broth with 1 1/2 tsp Italian (or other mix) herbs and some fresh squished garlic
pour over the veggies and sausage, drizzle balsamic over top and bake it in oven (450)(covered) for ~45 minutes and check if veggies are done.
we deviated from the recipe b/c I forgot it wanted to bake the veggies first

This is one we make a lot, but you do have to make the sausage ahead.
Egg Casserole
6 slices bread without crusts
12 beaten eggs
1 can mushrooms, drained (we leave these out)
1 can cream of mushroom soup
1/2 pkg. hot breakfast sausage, cooked & crumbled
1 c. grated cheese
3/4 c. milk
Butter one side of bread. Place face down in 9 x 13 casserole dish. Combine eggs, soup, and milk mixing well. Stir in mushrooms, sausage, and cheese. Pour over bread. Can be made ahead--just cover and chill overnight. Bake at 350 degrees for 30 to 45 minutes. Enjoy!
i made a slightly healthier version of those kfc bowls that are easy (and tasty). you can use frozen to make it faster.
assemble in these layers:
mashed sweet potatoes on bottom
corn, green beans, whatever veggies you can handle
chicken breast pieces (HEB has some good ones in the frozen section)
sprinkle some cheese and if you want to make it even tastier, bacon
throw in the oven to melt the cheese.
