One option is to do like me, and accept that your back seat and trunk are going to look like a nuclear bomb has gone off for the next 18 years. I've given up.
I gave up on car organization by about the 6 month mark. I currently have a package of wipes halfway under the passenger seat, a few pairs of toddler shoes scattered throughout (why can't the girl just keep them on til we get in the house?!), a couple applesauce pouches in my center console for emergencies (read: meltdowns), a bottle of benadryl in the glovebox, some princess figurines on either side of her car seat, books everywhere, and I'm sure if we looked hard enough we'd find some goldfish or cheerios.
You should see the car after a roadtrip to Houston. Oy.
I envy moms that can keep their cars organized. I just can't.
For right now, I primarily use the console and a big purse. In the console are diapers, wipes, diaper cream, and a disposable changing pad. In my purse are energy bars, peanuts, and handi-wipes. DD doesn't seem to need anything back there to entertain herself right now, other than the music I play, and the mirror back there. However, there are peanuts and all sorts of crumbs all over her car seat and the back seat.

I just keep everything in the diaper bag..nothing stays in the car (and yes, I still carry a "diaper bag" for my potty trained almost 3 year old).
Ditto. I make it a point to empty out the car at the end of each day. DD always takes her shoes off in the car and/or throws toys around but when I unbuckle her out of her carseat, I usually hand her as much as she can carry, I take the rest and we head in the house.
I also don't let DD eat in the car except for specific situations where we *have* to be in the car during a meal time.

My DH is a neat freak so leaving things in the car is not an option. He gets annoyed if I leave my coat in the back seat.
